Happy Friday! I am off to meet my mom for some breakfast and girl time before work. So glad it’s almost the weekend!
In the mean time, I thought I would share the pizza I made for dinner Wednesday night.
It included all sorts of leftover ingredients, yet it was prepared and baked fresh! This is an example of how I clean out my refrigerator and freezer by taking ingredients we’ve already ate, and creating something new. This is one way I save money and use up all of our extra ingredients. The pizza included: Bread maker pizza dough (I made two batches the last time I made pizza, and froze one dough ball), left over Italian Chicken Sausage from Monday’s dinner, a half a jar of marinara sauce I found in the refrigerator, sliced fresh mozzarella (also from the freezer), the rest of the mushrooms from my veggie loving dinner earlier this week, and dried oregano and basil from my spice cabinet.
Baked at 425 degrees for 20 minutes.
I served it alongside a salad, lightly dressed with a Red Wine and Olive Oil Vinaigrette from Trader Joe’s.

I am a big fan of leftovers since they’re easier and quicker than cooking a new meal! Pizza is a food I never get sick of!
Me too! Leftovers are great for those days when you just want a quick meal without the hassle! Cheaper and healthier than eating out too!
this pizza looks great! my husband would especially love it because of the sausage and mushrooms. i do the same thing with leftovers… i like creating new dishes from old leftovers to spice things up a bit and to use up extra food. i always tell cody that no food goes to waste in our house!

Basically I start the conversation with, ‘Hopefully you aren’t sick of ______, because we are eating it again tonight.’ lol
mmm that looks great! pizza is def my favourite, but salads are the easiest fridge cleaner i find!
Oh for sure! Everything can be tossed into the salad bowl, especially all those bits of veggies that are at the bottom of the crisper!

I will usually just eat leftovers with a salad on the side. I have never actually recreated it into something else (like a pizza), but that is actually a great idea!

. I do like leftovers, as long as they taste good that way haha. There are have been some things I’ve eaten that just don’t taste great when reheated and that bums me out!
Ha ha I understand! I do not like leftovers that include lettuce, whether in a salad, on a sandwich, etc. because it gets too soggy!
Gah, remind me to throw on chunks of mozzarella whenever I make a pizza instead of shreddings. You’ve got the right idea here!
I love fresh mozzarella in slices! Makes a pizza look so rustic, (and taste delicious)!

Just discovered your blog – the pizza looks delicious! If you like to make pizza a lot, I’d suggest buying a cast iron pizza pan (you can order it from Amazon or anywhere really) – it makes pizza so much crispier and easier – it’s probably the one kitchen pan I couldn’t live without once I started using it!
Oh that sounds so good, kind of like deep dish pizza? The pan I used was stoneware from Pampered Chef. It does a pretty great job of cooking the crust evenly, but I agree with you. Cast iron pizza is so good too!
