Salty-Sweet Treat

A co-worker of mine loves all salty foods.  Chips and salsa and pretzels are her go-to snacks, and she doesn’t like fruit or sweets.  I know!  Hard to imagine, right?! :-)  She is one of the nicest people I have been lucky to work with, always so kind and welcoming.  So when her father passed away, we wanted to do something special for her and her family.  We decided to all bring in homemade treats or put money towards additional store-bought meals.  When I volunteered for dessert, I knew I wanted to make something she would enjoy too.  With that thought, these salty-sweet cookies were created.

Honey Roasted Peanut Butter Cookies


1 cup peanut butter (I used salted)

2/3 cup sugar

1 egg

1 cup honey roasted, salted peanuts


Add peanut butter..

and the egg to a mixing bowl.


Place peanuts in food processer.


Process peanuts until ground into a fine consistency.


Add peanuts to mixing bowl with the rest of the ingredients.

DSCN0814 Using a hand mixer, mix ingredients until combined.

Form dough into patties and place on baking sheet.

007 - Copy (7)Lightly sprinkle top of cookies with sugar if desired.

008 - Copy (5) Bake at 350 degrees for 10-12 minutes, depending on heat of your oven.  Remove and let cool.  Enjoy for yourself or pass on to a friend!

  1. oooo the title of this post immediately intrigued me… i’m always a sucker for salty-sweet combos! i’m usually a fan of sweet over salty, but i love them together. my favorite would definitely have to be chocolate dipped pretzels. i also love peanut butter and banana. and these cookies look amazing! i’m totally making them!

  2. Oh, my gosh! The recipe is so simple! I love it!
    I definitely love sweets. My favorite way to combine them would have to brie with honey/jam on a cracker or on some bread. Also, can’t go wrong with fruit and nut trail mix.
